I hear what you’re saying, but cows are big too – even sheep can be extremely ‘plus’ size. Pork is often under-rated. It’s good for us, with high levels of vitamins B1, B6, B12, zinc and iron, and tends to be a lot cheaper than its farmyard cousins. I doubt that any of us really tap into its incredible versatility in terms of cooking. Pulled pork is barbecued or smoked very slowly, until it’s so soft it can be pulled apart easily by hand. Delicious!
