I had to laugh when I saw your question. Spatchcock isn’t a “breed” of chicken – it’s a way of preparing one.

The name is thought to be a contraction of “dispatch the cock”, meaning to kill the chicken, and the method involves cutting out the backbone so the bird can be flattened. This means it will cook fast and retain its juices well.
