Simon Gault: Shao cooking wine

What do you do with it?

I sent my partner to get a bottle of soya sauce, but he bought a bottle of Shao cooking wine instead. I have no idea what to do with it. Some suggestions would be good, as it’s a large bottle. Love your column!

Ordinarily, I’d stand by the rule of never cooking with a wine you wouldn’t drink, but in this case I’d make an exception. Shao Xing cooking wine is made from fermented rice and is an essential ingredient for many authentic Chinese dishes. It’s a perfect pairing for beef. Mix with oyster sauce, soy sauce, sesame or peanut oil, garlic and a pinch of sugar. Stir-fry sliced beef with yellow and red sliced capsicums, beans or snow peas and add the sauce.

You can also make glaze for grilled pork – mix with soy, ginger and dark brown sugar.
