Simon Gault reassures a mum that using left over veges is safe.

**I often find containers of leftover vegetables in the fridge. If I’m pretty sure they’re under five days old, I use them in a frittata. But my daughter claims I’ll poison her and her brother when I do this. Is she right? And please don’t say yes!

You’re safe – as long as they are only up to five days old and have been kept in a covered container. Put a date on them, or mark the calendar to avoid any confusion. Also, you can freeze cooked vegetables for up to six months, but I recommend using them sooner rather than later.
