Simon Gault – Apple desserts

Simon gives a reader a good way to use her extra apples.

**We’ve had a glut of apples at home this year and I’ve been making every apple recipe I can think of, but still they keep coming. I’m having a dinner party next month and wondered if you could suggest an apple dessert that I might not have thought of yet.

This is a bit decadent, but it’s delicious and so easy to prepare – I’m assuming you don’t want to spend most of the night in the kitchen.

Take your apples, cut off the top and the bottom, then core them and place in a baking dish. Fill the centres with jersey caramel lollies, then bake until the centre is soft, pull them out of the oven, sprinkle biscuit crumbs on the top and pop them back in for five minutes. They will be delicious!
