Simon Gault tells us which vegetables are best to use for chips.

Recently I made some parsnip chips and they were amazing. What other vegetables could you use, apart from the obvious ones such as potato and kumara? And what’s the ideal way to cook them?

Carrot is another vegetable that can be turned into delicious chips. While you could shallow fry, then season them, I recommend oven-baking for the healthiest result. In this case, cut them into long thin strips then toss in oil, salt and pepper before baking for 15 to 20 minutes. You could add some dried herbs too, or even a little ground nutmeg.
