My friend is having an Abba-themed party for her 40th. We all have to bring a dish that’s Swedish-style. I’ve never been there, and the only thing I can think of are those rollmops you see at the supermarket. I’m not the world’s most patient cook, so I’d like to make something simple.
What a great idea for a party – I’ll have to remember that! The Swedes are quite big on meatballs, as anyone who’s ever been to an Ikea store will know, so I suggest that’s what you make for the party. The meatballs themselves can be pretty standard: mince, egg, breadcrumbs, black sauce, chopped onion and dried herbs.
The sauce is the important part: 1 cup of beef stock, one cup of cream, 3 tablespoons of flour, dried herbs and a teaspoon of soy sauce. Put them all in a saucepan and whisk until smooth, then simmer for 10 minutes until the mixture thickens, then pour over meatballs. Season with some black pepper to taste.
