Simon Gault: Unripe pumpkins

Simon Gault gives a reader tips on how to find a pumpkin with the perfect mature flavour.

I love cooking with pumpkin in many different ways, but why is it hard to buy one that is mature enough to have a decent flavour?

The growers seem to harvest it before it is mature. I feel supermarkets should refuse to sell unripe product which has no taste! I questioned them, but no-one seems to care.

If you’re feeling dissatisfied with your local, the best bet is to find a farmers’ market in your area with someone who will listen to your concerns.

Before purchasing your pumpkin, always give the shell a light knock. If it’s ripe, it should sound hollow. If all else fails, why not have a go at growing them yourself?
