Ask the Expert: Melting chocolate

Melting chocolate in the microwave is harder than it looks.
How to melt chocolate in the microwave

Q. I tried to melt chocolate in the microwave when I was making brownies and it turned into hard little granules. Is there a trick to this?

A. You can melt chocolate in the microwave but never use a temperature higher than medium. Heat chocolate for a minute at a time, stirring in between, until melted. The old-fashioned double-boiler method, with a bowl atop a pot of boiling water, has much less potential for disaster!
