With summer just around the corner, it’s time to get thinking about quick and easy recipes for rustling up a delicious picnic for the whole family.

Di Kaino, wife of Kiwi rugby star Jerome Kaino, has shared one of her favourite healthy recipe ideas – summer salsa with pork mince in lettuce cups.

“We all have our own favourite ways of eating this,” says Di, who has three children, Milan, Kobe and Grayson, with husband Jerome.

“Jerome likes his with hot chilli sauce, whereas Milan just likes the mince in the lettuce leaves. Kobe and I will eat it with the yoghurt and hoisin.

“Whichever way you choose, it’s great to enjoy a meal all together.”

Summer salsa pork mince in lettuce cups

Prep Time: 15 minutes

Ingredients:

I Tbsp oil

500g Pork Mince or (chicken Mince)

2 Cloves crushed Garlic

2 Tbsp Fresh grated Ginger

1 Tsp fish Sauce

1 Tsp Sesame Oil

1 Tsp soya sauce

1 Lettuce leaves rinsed

Summer Salsa

2 Mangos Cubed

1 Avocado cubed

1 Small red onion finely chopped

Fresh mint handful

1 Fresh Lemon juice

10 cherry tomatoes chopped into halves

Topping sauce

Hosin Sauce

Greek Yohgurt

Hot Chilli sauce if you’re brave

Method:

Mince:

Heat oil in fry pan over medium heat, add garlic and ginger cook for 2 mins. Add Pork Mince and fry until it just starts to brown make sure there are no clumps of mince, add fish sauce, sesame oil and soya sauce stir through, cook for a further 5 minutes.

Salsa:

Cube mangos, avocado and cherry tomatoes, add in onion, roughly chopped mint and squeeze in the juice from one lemon.

To Serve:

Spoon mince mixture into lettuce leave, top off with salsa add on top teaspoon of Greek yogurt and hoisin sauce or if you like it hot like Jerome add on some hot chilli sauce.
