Everyone loves a good Kiwi Christmas barbecue. But this year you can forget telling the kids to “at least have SOME salad.” These instant-hits will have you asking them to “please leave some for your brother!”
Not only are these salads crowd-pleasers, they are all healthy and can all be prepared in under half an hour. So you can lounge about and have a wine while someone else deals with the meat. Merry Christmas.
Asian chicken & rice noodle salad with orange & tamarind dressing
Time: 25 mins
Serves: 4
Ingredients:
200g rice noodles
1 packet snow peas
1 clove garlic, crushed
400g Tegel Fresh Chicken Skinless Breast, sliced
2 carrots, cut into matchsticks
1 Lebanese cucumber, cut into chunks
1 red or yellow pepper, deseeded and cut into strips
1 cup bean sprouts
1/4 cup chopped fresh herbs – coriander, mint
Dressing:
1/4 cup orange juice
2 Tbsp reduced salt soy sauce
3 Tbsp sweet chilli sauce
1 tsp tamarind puree
2 tsp sesame oil
1 small clove garlic, crushed
Method:
1 Prepare the rice noodles following the instructions on the packet. Drain and set aside.
2 Blanch the snow peas in boiling water for 30 seconds. Drain and set aside.
3 Heat a dash of oil in medium sized non-stick frying pan. Add the garlic and Tegel Fresh Chicken Skinless Breast and stir fry over high heat for 4 to 5 minutes or until the chicken is golden brown and cooked through.
4 Place the drained rice noodles on a serving platter. Top with the chicken, snow peas, carrots, cucumber, red or yellow pepper, bean sprouts and herbs. Drizzle over the dressing and serve immediately.
Dressing:
1 Whisk all the dressing ingredients together. Alternatively put ingredients into a jar. Screw on the lid and shake to combine.
Easy Chicken & Rice Salad
Time: 5 mins
Serves: 4
Ingredients:
Wild rice blend, cooked and chilled
300g Tegel Meal Maker Shredded Roast Chicken 300g
Sliced spring onions
Feta
Sun-dried tomatoes
Red pepper, deseeded and chopped
Baby spinach leaves
chopped fresh Parsley and Mint
Balsamic Dressing
Method:
Combine cooked rice with Tegel Meal Maker Shredded Roast Chicken 300g, spring onions, feta, sun-dried tomatoes, red capscicum, spinach, mint and parsely in a bowl. Drizzle with balsamic dressing.
Smoked chicken slaw
Time: 15 mins
Serves: 4
Ingredients:
1/2 cabbage (can use Savoy, regular or a mixture of both)
4 spring onions, finely sliced
1 punnet snow pea sprouts, trimmed
½ cup roasted and salted peanuts
1 cup coriander leaves
300g Tegel Manuka Smoked Chicken Breast – Original 300g
¼ cup rice wine vinegar
juice of 1 lime
2 tsp sugar
3 Tbsp oil
1 Tbsp black sesame seeds
1 Remove core from cabbage and discard, finely shred the leaves. Place in a large bowl or platter. Add spring onions, snow peas, peanuts and coriander leaves and toss to combine.
2 Slice the Tegel Manuka Smoked Chicken Breast – Original 300g into small pieces and mix through the slaw.
3 Combine rice wine vinegar, lime juice, sugar, oil and black sesame seeds in a jar and mix well. Season the dressing with salt and pepper to taste.
4 Drizzle dressing over the salad and toss again before serving.
Mexican Smoked Chicken Salad
Time: 25 mins
Serves: 4
Ingredients
4 large fresh corn cobs*
1 Tbsp oil
300g Tegel Manuka Smoked Chicken Breast – Original 300g
2 large handfuls of rocket
1 red onion, finely sliced
1 punnet cherry tomatoes, halved or quartered
2 avocados, chopped
1 cup coriander leaves
1/4 cup extra virgin olive oil
juice from 1 lime
*If fresh corn cobs are not available you can use frozen
Method:
1 Strip husks from the corn, brush with oil and then barbecue or cook on a hot plate until the corn starts to colour and gets dark brown flecks. Remove the corn from the heat.
2 When cool enough to handle, scrape the kernels from the cob using the back of a heavy knife.
3 Slice the Tegel Manuka Smoked Chicken Breast – Original 300g into bite size pieces and then combine on a large platter with the rocket, onion, tomatoes, corn, avocado and coriander.
4 Combine oil and lime juice, and season with salt and freshly ground black pepper. Drizzle over the salad.
