Q. How do I store root ginger? When I buy it I never seem to use it up and it just goes to waste.

A. You can store root ginger for months by placing the peeled and sliced root in a clean, glass jar, pouring in sherry to cover, and sealing. Keep the jar in a cool place or in the fridge. The small amount of sherry that is soaked up by the ginger does no harm to cooking. Eventually, you can use the gingered sherry dregs to add to an Asian chicken dish. Alternatively, root ginger freezes well – simply grate off what you need with each use.
