The reigning global king and queen of the music world have released details of their “spiritual and physical cleanse” – and were not not simply talking about a wardrobe edit.
The husband and wife freed their minds and bodies, and went on a 22-day vegan diet in December. And after seeing the stunning pair wow the crowds at the Grammys, it looked like this detox definitely worked for them!
In an effort to cleanse like an A-list star, vegan guru Marco Borges shares one of Bey and Jay’s favourite meal recipes for quinoa, almond and rocket salad:
Serves 2.
olive oil, 2 tablespoons
apple cider vinegar, 1 tablespoon
maple syrup, 1 tablespoon
Sea salt and black pepper, to taste
rocket, 4 cups
cooked and cooled red quinoa, 1-1/2 cups
honeydew chunks, 1-1/2 cups
slivered almonds, 1/4 cup
1. For the dressing, whisk together the oil, vinegar and syrup. Add sea salt and pepper, as desired.
2. Onto two serving plates divide the rocket, quinoa and honeydew. Sprinkle with the almonds and drizzle with the dressing.
