1 Port Vila Markets

Always vibrant and colourful, the best way to start the day in Port Vila is at the markets. They’re open Monday to Saturday every week, the perfect place to get yourself some fresh fruit or vegetables for the rest of your stay.

The fresh flowers are beautiful and a great idea to buy some if you’re staying for a while. Pop them in your room at your accommodation to make it feel like home. Head across the road once you’re all shopped out for a coffee and pasty from French café La Peche.

The restaurant at this beautiful resort has a fantastic menu. If you’re there you must order the Santo Beef – the high quality, locally raised meat from Santo Island.

4 L’Houstalet

The star of the menu is something you’ve probably never thought to order before: the “flying fox” or, as we know it in New Zealand, the fruit bat! French chef/owner Clement Martinez is an amazing host and shared his secret for making such a flavourful dish. The fruit bat is marinated in red wine for 12 hours and cooked for 2 hours until tender – it’s delicious.

On a Friday it’s Curry Night at The Grand, and it must be on your list of restaurants for your Vanuatu trip. All the curries are delicious and it’s so hard to choose, the platter of four is the way to go – try each of the different flavours along with naan bread and roti.
