Switch up weeknight dinners with this quick and simple ginger chicken stir fry recipe

This ginger chicken stir fry recipe is quick, simple and more importantly delicious.

You can vary the vegetables to suit your taste and what you have on hand or even swap out your protein. You’re only limited by your imagination.

Ginger chicken stir fry

Ingredients

  • 1 tablespoon Pams Pure Olive Oil

  • 500g Pams Free Range Chicken Breast, skinless and boneless, sliced

  • 1 Red Capsicum, roughly chopped

  • 1 medium sized Courgette, sliced

  • 3-4 Button Mushrooms, sliced

  • ½ head broccoli, divided into florets

  • 4 drops Pams Finest Natural Ginger Extract

  • 2 drops Pams Finest Natural Garlic Extract

  • 2 tablespoons fish sauce

  • 1 tablespoon Pams Soy Sauce

  • Juice of 1 lime

  • 200g rice noodles, cooked according to packet instructions

  • 3 Spring Onions, sliced

  • Small handful Pams Cashew Nuts, roasted

Directions

Heat the oil in a wok or large frying pan over a medium-high heat.

Stir-fry the chicken until cooked through and lightly golden. Lift from the pan and set aside.

Add the vegetables, spice drops, fish and soy sauce to the pan and cook for 2-3 minutes until the vegetables are almost tender.

Add the chicken back into pan and cook for a further minute. Drizzle over the lime juice.

Serve on rice noodles and sprinkle with spring onion and cashew nuts.

Makes 4 Servings.

Tip: for a little more spice add a drop or two of Pams Chilli Spice Drops.
