Simple and fresh summer platter

As we come into the summer season, a platter is a great way to keep friends and family fed, we love the use of Corn Thins paired with cheeses, meats and fresh summer fruits and veges

Platter Ingredients:

  • Fresh sliced seasonal fruits: apples, strawberries, pears, figs, grapes

  • Smoked salmon, prosciutto, deli meats

  • Bowls of olives, sun dried tomatoes, tapenade, fresh tomato, roasted beetroot

  • Bundles of fresh herbs: rosemary, basil, dill

  • Selection of cheeses: cheddar, feta, blue

  • Selection of dips: ricotta, cream cheese, nut butters, pesto, hummus

  • Indulgent extras: honey comb, chocolate covered strawberries, nuts, edible flowers

Method:

  1. Arrange all platter and topping ingredients on a platter or large chopping board. Leave space for Corn Thins slices. Start by placing your bowls and cheeses, then place your meat followed by fruits, smaller items and garnish with herbs and edible flowers.

  2. Assemble a few Corn Thins slices with the toppings of your choice to inspire your guests.

  3. Serve with your favourite drinks and enjoy!

Tips:

To ensure the Corn Thins slices stay nice and crunchy, put them on the board last, keeping extras in their packets and top up as needed.

Place bundled herbs or flowers in tall glasses or jars to give your platter some height.
