Who doesn’t love banana bread? This yummy recipe is the perfect blend of sweet and savoury – and the best part? It’s healthy!

One of the bonuses of banana bread (aside from its irresistible flavour) is all the different ways you can enjoy it. Smother it with your favourite jam first thing in the morning or enjoy a slice mid-afternoon with a cuppa. I like to eat my banana bread post-dinner – it makes me feel like I’m treating myself to a piece of cake!

When you try my recipe, you’ll notice I’ve used gluten-free flour. This is simply personal preference – you can use any type of flour and the recipe will still be super-healthy. You could also try swapping out the natural Greek yoghurt for coconut yoghurt, if that’s more your style.

Banana Bread

SERVES 6

PREPARATION 10 MINUTES

COOKING 50 MINUTES

• 2 free-range eggs

• 1/2 cup maple syrup

• 2 mashed bananas (the browner the better as they mash easily and taste sweeter), plus 1 extra banana (if you want one on top to decorate)

• 1/3 cup walnuts, roughly chopped

• 1/4cup natural Greek yoghurt

• 1 teaspoon baking soda

• 1 tablespoon vanilla essence

• pinch of salt

• 1½ cups gluten-free flour

1. Preheat oven to 180°C. Line a loaf pan with baking paper.

2. In a bowl, beat eggs, then add maple syrup and mix together well.

3. Add mashed bananas, walnuts, natural Greek yoghurt, baking soda, vanilla and salt. Combine well. Add gluten-free flour and mix thoroughly.

4. Pour batter into loaf pan and bake in the oven for 50 minutes. To make sure it is cooked through, place a knife or skewer into the cake before removing from the oven. If the knife or skewer comes out clean, it is ready!

5. Let the banana bread cool on a wire rack before serving. It’s best served warm, with butter, your favourite topping or icing.
