I have a recipe which calls for Shitake mushrooms but I have no idea what these are or where to find them. Can you help please?

Woody flavoured Shitake mushrooms are extremely popular in Asian counries where they are credited with anti viral and immune boosting properties. They can be kept in the fridge for 2-3 weeks and used in much the same way as white button mushrooms. You should be able to find Shitake mushrooms at your supermarket, in fresh or dried form.
