Low fat fruit muffin

Low fat fruit muffin

1 Egg

1 & 1/2 tbsp oil (rice bran)

3/4 C Golden syrup

1 & 3/4 C Flour

2 tsp Baking soda

3/4 C Bran

1 C Unsweetened stewed apple or other fruit

2 C Berries (Blueberries, rasberries, blackberries)

  1. Mix all ingredients together until just combined

  2. Spoon into well greased muffin tin and bake for 25 minutes at 200 degrees

Hint- Replace stewed fruit with canned pie apple or pie fruit such as rhubarb
