If anyone knows how to run a kitchen it’s food writer and editor of Food magazine, Sophie Gray. Sophie develops all of the recipes that appear in Food magazine, creating each dish in her test kitchen and then working with stylists and photographers to capture the finished dish in the images that appear in the magazine.

On the day we visited her in her test kitchen in Auckland she was creating a mushroom tart and a dessert using canned plums for her next issue. Amidst the bustle and clamour of food prep, she shared her top tips on how to prepare for a dinner party or gathering at your place – and how to deal with the clean-up afterwards.

Preparing for a gathering at yours – and dealing with the clean-up afterwards:

  1. If you’ve got a lot to get through, cooking-wise, make a work plan – write down what needs to be done in what order.

  2. At the end of a test kitchen day there’s always a sense of relief when I load the dishwasher.
